Moong-Tuwar Daal tadka

I had prepared this for a potluck party at friend's home and people did like it :) One of my friends had asked me to post this recipe on Blog, so I am :) very very easy easy and according to us very tasty as well...you try and let me know ;)

Ingredients:


1:1 yellow split moong daal and Tuwar daal.
Salt to taste
Sugar to taste
Red chilli powder to taste
Turmeric powder
Grated ginger
Coriander seeds powder,Cumin seeds powder
Curry leaves,Mustard seeds,Cumin seeds,Asafoetida ( all these for seasoning)
Chopped coriander for garnishing


Procedure:

  1. Pressure cook both the lentils together till soft. ( Generally 3 whistles or 4)
  2. In a wok or kadhai add 1-2 Tsp oil ( or as per your quantity of daal) and heat it. Once heated,add mustard seeds,Asafoetida,curry leaves,turmeric powder. Add grated ginger and stir well.
  3. Optional: at this point you can chopped onion and/or chopped tomatoes as well I am posting the simplest version here.
  4. Add well mixed , cooked daal into this. Sauté for 2 minutes. 
  5. Add little water to adjust your required consistency for daal.
  6. Mix well, let the daal come to boil. ( Parallely,on the other flame keep another kadhai and heat 2-3 Tsp oil.)
  7. Add salt,sugar.
  8. Once well cooked, add Coriander powder,cumin seeds powder. Mix well in order to remove any lumps of these powder.
  9. Switch off the gas flame.
  10. On the top of the daal spread Red chilli powder(to taste). Add cumin seeds to heated oil ( kept in other kadhai) . Once they splutter add this Tadaka on the top of red chilli powder. Immediately cover the kadhai with a lid. This helps retaining the aroma of the Tadaka on the daal.
  11. Before serving, remove the lid, mix daal well and serve.

Split Red Lentils Daal / मसूर की दाल फ्राय

Red Lentils


Ingredients:


1 cup Split red lentils
1 medium sized onion. Cut into vertical strips
2 small or 1 medium tomato finely chopped
salt to taste
turmeric
mustard seeds
cumin seeds
green chillies chopped as per taste. 
1/2 Tsp sugar
1 Tsp coriander powder
1/2 Tsp cumin powder
1 Tsp grated ginger
Asafoetida
For garnishing, finely chopped coriander


Procedure:
  1. Pressure cook the Masoor / Split red lentils for approximately 3-4 whistles ( as per your pressure cooker,but it should cook properly soft). After pressure cooking ,the red lentils become yellow:) so don't be surprised to see red lentils daal fry as yellow!!!
  2. In a pan heat up 2 Tsp oil.
  3. Once oil is hot, put mustards seeds,cumin seeds, Asafoetida, chopped green chillies.
  4. Stir well. Add chopped onion.
  5. Sprinkle little water to fasten the cooking of onion. Once onion is cooked well, add chopped onion, grated ginger.
  6. Stir well.
  7. Add little water. Add coriander powder,cumin powder,turmeric.
  8. Let it come to a boil. 
  9. Churn little bit the pressure cooked daal before adding it to the pan.
  10. Add cooked Masoor/red lentils.
  11. Mix well. While stirring add salt to taste. Add sugar.
  12. Once it comes to a proper boil. Switch off the stove and pour chopped coriander for garnishing. 
Goes very well with steamed plain rice.

Karnataki Style Tomato Rassam / टोमँटो रस्सम




Since long I wanted to put this recipe, today was the day may be:)
I am giving the basic style here. The ingredients how many will be totally depend on your own taste. Hence  adjust the quantity as per your taste  :)


Ingredients:


Half cup Tuvar daal
1 medium sized tomato
1/2 Tsp Turmeric
1.5 Tsp Rassam masala
1/2 Tsp Tamerind extract
Jaggery as per taste
Salt to taste
Mustard seeds,curry leaves,Asafoetida for seasoning
Chopped Coriander leaves for garnishing


Procedure:
  1. Cook Tuvar daal in cooker for 3 whistles (whistles depend on your cooker) 
  2. Cook tomato in cooker. ( Should be able to make paste out of it) You can also cook it in microwave if you want. Cook it till it totally becomes soft and able to make a paste out of it. Once cooked, make a pure of tomato in mixer.
  3. Keep around 2 cups of water in pan to heat.
  4. In water,add tomato pure, turmeric, Tamerind extract/pulp,jaggery.
  5. Let it come to boil. Add Rassam masala.
  6. Boil it till it comes to a nice boil.  
  7. Remove the water from cooked daal if it is there before adding to the water mixture because it will make Rassam more watery. Adjust water as per your taste or choice of consistency 
  8. Add cooked and mashed Tuvar dal now. 
  9. Stir well.Add salt.Mix well.Taste and check the spices. Add if necessary.
  10. Once it comes to a nice boil, all the ingredients are proper. Make the flame on slow. And keep a small pan on stove ready for seasoning.
  11. In this pan add 1 Tsp pure Ghee. Once hot, add mustard seeds. Let it splutter well. Add Asafoetida,curry leaves. 
  12. Add this seasoning on the top of Rassam. 
  13. Garnish with chopped Coriander leaves.
Serve with steamed rice...hot hot :)

Panchamel Daal / Five Daal Fry / पंचमेळ डाळ



Ingredients:
Split Bengal Gram 1/4 cup ( हरभरा डाळ / चना दाल )
Split Red Gram 1/4 cup ( तुरीची डाळ / तुअर दाल )
Split Red Lentils 1/4 cup ( मसूर डाळ / मसूर दाल)
Yellow Split Moong 1/4 cup ( पिवळे मूग )
Horse bean 1/4 cup ( Urad daal / उडदाची डाळ )
1/2 T spoon Turmeric
2 T spoon or to taste Red chilli powder
6 Cloves
6 Cardamom
3 bay leaves
1 small stick of cinamon
mustard seeds, cumin seeds 1 T spoon each
1/4 T spoon Asafoetida
2 T spoon or to taste garam masala
2 T spoon Grated ginger
Lemon juice 1/2 T spoon
Salt to taste
Sugar 1 T spoon
Ghee or Oil

Procedure:
  1. Wash all the grams well and pressure cook them with water of quantity 3times the grams.
  2. Keep 2 Tsp oil or ghee in pan to heat up. Put mustard seeds, cumin seeds, asafoetida.
  3. Put cloves,Bay leaves ,Cloves,Cardamom,Cinamon and stir fry well for 1 minute.
  4. Put onion and stir well till it cooks well. Add chopped tomatoes. Sprinkle little water to make onion, tomato cook well.Stir well.
  5. Add turmeric,red chilli powder, coriander powder,garam masala.
  6. Add cooked daal. Add 1/2 cup water if daal is not watery. If cooked daal has water in it add as per your taste.
  7. Add grated ginger ,salt, sugar.
  8. Let it cook for some minutes in order mix all the spices well in the daal.
  9. Garnish with chopped coriander leaves.
  10. Before serving add lemon juice.

दाल मखनी / Daal makhani



One of the very delicious punjabi recipes..and my favourite too..daal makhan marke..:) daal makhni :)


Preparation time:10 minutes
Cooking time : 15 minutes


Ingredients:
3/4 cup split black urad daal
3 T spoon chana daal(Bengal gram)
3-4 green chillies or to taste
2-3 garlic cloves ( 3 if large otherwise 4 medium)
cumin seeds 1 T spoon
dry coconut grated 2-3 T spoon
puree of 2 tomatoes.
grated ginger around 1 T-spoon
salt to taste
2 T spoon butter
for tempering: turmeric, mustard seeds,cumin seeds,curry leaves.
Whole garam masala : 2 Cloves, 2 cardamom,small stick of cinnamon,bay leaf
coriander leaves finely chopped for garnishing

Procedure:
  1. Cook urad daal and Bengal gram together in pressure cooker.
  2. Heat up 1 T spoon oil in wok.Once oil is hot put cumin seeds and let it splutter. Then put cloves, cardamom, cinnamon,bay leaf ( Whole garam masala). Stir well. Add a ground mixture of garlic,ginger,green chillies,1 T spoon cumin seeds,grated coconut(dry). Stir well.
  3. Now,Pour tomato puree and mix everything well and keep stirring. Add little water.
  4. Add 3-4 T spoon of Butter. And mix well while stirring.
  5. Add cumin seeds powder,coriander powder,red chili powder,turmeric. Add curry leaves.
  6. Let the mixture come to a proper boil closing with the lid .
  7. Once the mixture is properly boiled,Pour the cooked urad daal now along with the drained water.
  8. Mix well and stir gently.
  9. Add salt to taste. Check the taste and add salt/spices if needed.
  10. Put finely chopped coriander leaves generously.

Serve hot with hot chapatis or naans. :)

Note: Add or reduce green chillies,garlic cloves as per your taste.

हिरव्या तुरीच्या सोल्यांची आमटी/ Green(raw toor daal d'lite)




This could be a seasonal recipe as we will find these lentils pod in this winter season only.
This is one of my favourite recipe ..
Preparation time: 20 minutes
Cooking time: 10 minutes.
Ingredients: 1 cup lentil seeds
to see the lentil picture
green chillies as oer taste. Depending on the spice of chillies.
2 table spoon ground nuts roasted.
cumin seeds
approximately 1 inch ginger grated
coriander leaves
4-5 garlic cloves or as per the taste
mustard seeds,oil,Curry leaves for tempering
water
Procedure:
  1. Shallow fry the lentils and green chillies in little oil in a fry pan/kadhai.
  2. Let it cool down.
  3. Parallely, roast the groundnuts and remove their skin.
  4. Grind cumin seeds,coriander leaves,grated ginger,ground nuts together.
  5. Grind lentils and chillies finely along with enough water to for proper grinding.
  6. Grind both the mixture just once ( just for the sake of mixing both the mixtures well).
  7. Heat the iron wok. Pour 1 table spoon oil.
  8. Put mustard seeds.
  9. Pestle the garlic cloves and put it.
  10. Pour the mixture and stir well.
  11. Add enough water to have required consistency in dal.
  12. Add salt. Little lemon juice if required for the taste.

Serve hot with rice..:)
