5-6 Twigs Coriander Leaves
Curry leaves ( optional if you get it )

Procedure :

  1. Wash the lentils with water.
  2. In a pan or a bowl just add enough water to soak the lentils.  Not immersed but just enough to wet all lentils.  Soak for 10 hours or overnight.
  3. In the morning remove all the extra water if there was extra and grind in the Grinder adding 1-2 tsp water only. Just add little to make grinding easy.
  4. Cover with a lid and let it ferment for 8 hours.
  5. Once ready, grind Spinach, ginger, chili in a mixer/grinder and add this paste to the batter.
  6. Add salt.
  7. Keep a deep pan with almost 1-1.5" of water in it to boil. Keep a stand inside to hold a plate or a pan.
  8. Add Soda to the batter and mix well.
  9. Grease one Steel plate with side edges or a pan with good height edges ( you can use a small cake tin too )
  10. Add the batter onto the pan and make sure it is spread evenly.
  11. Keep inside the boiling water pan and cover with a lid.
  12. Steam for 10 min on a medium low flame; Careful with the steam.
  13. after 10 min put a knife or a fork in it and see if it comes out clean, if yes switch off the gas and keep it covered until it cools down otherwise let it cook for another 2-3 min and keep checking.
  14. Once cool down, cut into square shaped pieces and keep 2 tsp oil to heat in another pan.
  15. Once oil is heated ,add mustard seeds, once they splutter add cumin seeds, asafoetida and Urid daal.
  16. Pour this tempering over the Dhokla pieces and garnish with chopped coriander and serve with Tamerind or any of your favorite chutney.
Enjoy.....and let me know how you find it

Roasted potatoes / Crispy Potato wedges

A good option for Starters, healthy substitute to Chips ( no frying ) and no time spent cooking or preparing stuff...

Ingredients:

4 small potatoes ( for the quantity in above pic )
1 Tsp Olive oil.. I used Extra Virgin Olive Oil
salt for seasoning
Ground black pepper
Sweet chili sauce for a dip
That's all....... :-)

Procedure:
  1. In an oven tray, lay an aluminium foil and keep it in Oven
  2. Keep oven for preheating. Temp. 200 Deg. ( Appropriate one for Gas oven I think it mark 6. confirm it,am not sure)
  3. Meanwhile, wash the potatoes and cut them into big cubes ( as shown in pic or whichever way you like ). Don't peel them off.
  4. In a large bowl add potato cubes, Olive oil, salt, powdered pepper and mix.
  5. Spread these cubes on the baking tray.
  6. Roast for 30 min or until golden brown / crispy looking. Flip them in between to even roast all the sides.
  7. Serve hot with fav. dip.
I had also kept couple of tomato slices for roasting. But they take 10-12 min. They need to be removed in less time than potatoes :-)

Health benefits of potatoes:
They are so rich in Vitamin C. If you take away the fat ( like in fried fries or chips or baked potatoes with cheese or butter) and then it is an exceptionally healthful low calorie high fibre food that offers protection against cardiovascular diseases. It also have blood pressure lowering potential, vitamin B6.
The potato skin is a concentrated source of dietary fiber, so to get the most nutritional value from this vegetable, don't peel it and consume both the flesh and the skin.

  6. Just before you serve, add the 'Bombay mix' mixture and salt and then mix gently.
You can add sweet and sour Tamarind-Jaggery sauce also if you like:)

Note: I have used Bombay mix mixture but it is as per your taste you can use any but it should be spicy because we are using sweet corn kernels:)

Healthy benefits of corn:
  • Helps in maintaining a good health for our heart.
