Butter Naan and Aloo Palak




One of my favourite and am sure everyone's favourite :) Indian bread .. tandoori style bread....


Ingredients: 


250gm plain Flour
2tsp sugar
1/2 tsp salt
1/2 tsp baking powder
100ml  milk
2 tsp oil
sesame seeds
fresh chopped coriander
melted butter for brushing naan


Procedure:

  1. Sift together the flour,sugar,salt and baking powder.
  2. In a separate bowl, mix oil and milk together.
  3. In a pan in which you are going to make dough, make a well in the centre of the dry ingredients and then in this pour the milk-oil mixture.
  4. Start making dough.
  5. The dough should become soft. Knead well back and forth. 
  6. In an oiled pan ( non metalic and oven proof) keep the dough.
  7. Cover the pan with muslin cloth or tea towel and keep in a warm place for minimum 1 hour.( I kept it in an oven heated on minimum temperature.
  8. After one hour, the dough will rise up. ( Ideally it should be rise up to double size)
  9. Once risen up, make 5 balls off the dough.
  10. Preheat the oven on 220 degrees ( or on the highest grill temperature of the oven). Keep a baking sheet on the tray and keep the tray in oven.
  11. Role the dough ball into oval shaped Naan. Pour little sesame seeds and finely chopped coriander over Naan bread and role again on the Naan to suppress the seeds and coriander.
  12. Keep the Naan on the baking sheet and keep the tray in the upper shelf.
  13. Grill for 2-3 minutes or till the brown coloured spots.
  14. While hot, brush with butter and serve.

I am also going to post Naan using Yeast. Today's was the Baking powder version. 
Let us see which is better either with Yeast or with Baking powder.





The Subji you saw above is Aloo Palak, so thought of posting the recipe immediately instead of posting separately.
I prepare aloo Palak without onion and garlic. You can try it this way.

Ingredients:

2 Big Boiled Potatoes ( Don't peel off them)
Palak /Spinach 250 gm
Mustard seeds
Cumin Seeds
3-4 Green Chillies chopped
2 Tsp Coriander powder
Salt to taste
Turmeric
Asafoetida
Curry leaves

Note: you can make changes to quantity of ingredients as per your requirement or taste always.

Procedure:

  1. Wash and then chop Spinach leaves.
  2. Heat 1-2 Tsp oil in pan. Once heated, add mustard seeds. When the crackle add cumin seeds, Asafoetida, green chilies, curry leaves.
  3. Add chopped spinach leaves. Stir well.
  4. Spinach will start loosing water. Stir well. And keep cooking till it is soft.
  5. Once you are happy with the consistency, add Turmeric now.
  6. Mix well and add chopped potatoes. ( chop potatoes with skin)
  7. Give a nice stir and add salt to taste. Add sugar little bit.
  8. Add Coriander powder.
Taste and add salt if needed. Serve Hot with home made Naans :)

Spicy Poories with Koool Aloo Raita!!





I got this label 'Duo recipes ' to portray some recipes which comes in mind together. I mean if recipe 'A' comes in mind then automatically B comes along to compliment A :)
Alright, so here comes one of my favourite...Spicy poories...a simple recipe with very few ingredients..and yet so yummy :)
Preparation time: 10 minutes
Cooking time: 10 minutes
Ingredients:
Puri:
2 cups wheat flour
water to make a dough
Ajwain seeds
Sesame seeds
oil for deep frying
salt to taste
Red chili powder as per taste
2 tsp Turmeric powder
Half tsp Garlic paste(optional)
2tsp Gram flour/ Besan

For Raita:
7-8 small or 5-6 medium sized potatoes.
Yogurt
salt to taste
4 green chillies chopped
pinch of asafoetida powder
1 tsp sugar
1 tsp mustard seeds powder
coriander powder
For tempering: 2 tsp oil,mustard seeds,cumin seeds,1 tsp urad dal,curry leaves.
chopped cilantro for garnishing

Procedure:
Puri:
  1. Mix all the ingredients together along with 2 tsp oil and knead a stiff dough.
  2. Make small sized balls and apply little oil on ball and then roll them into round puris.
  3. Heat the oil in a nonstick pan or a wok.
  4. Deep fry the puri. As soon as you put the puri in pan, press it gently with the spoon.This makes the puri to puff well.

Raita:

  1. Cook the potatoes in pressure cooker.
  2. Once they are cooled down, peel them off.
  3. Cut into small cubes.
  4. Churn the yogurt well so that it will not leave water once mixed with potatoes.
  5. Add this yogurt in chopped potatoes along with sugar.
  6. Heat up the oil in small kadhai and put mustard seeds,cumin seeds,urad dal,asafoetida powder,chopped green chillies and curry leaves.
  7. Pour this tempering on Raita.
  8. Mix well.
  9. At the end just before serving add salt as per taste.
  10. Garnish with chopped cilantro.

Corn Soup


I had prepared this soup with the sandwich and then just thought that i can start giving recipes which can be prepared together. So this soup can/may go hand in hand with the earlier Sandwich(onion-tomato stuffed).

Preparation Time: 30 minutes including cooking.

Ingredients:

3-4 Corns Or already available sweet corn kernels
1 Table spoon Corn flour
salt to taste
2 tea spoon sugar
Black Paper+jeera(cumin seeds) powder
Lemon juice
Grated Ginger for flavoring ( Almost as lengthy as an index finger) :) i cant tell in terms of inch
3-4 Glass of Water.

Procedure:


  1. Start boiling the water in a steel pan; once it is boiled, pour the corn kernels in water along with the grated ginger.( so that ginger flavor comes nicely)

  2. Let the kernels boil finely, and allow it to become quite soft.

  3. Once you find them enough soft,Put sugar,salt in it.

  4. Stir well.

  5. Take 4-5 table spoon of water in a bowl and mix the cornflour well with your hands only so that the lumps wont be there.

  6. While stiring the soup with spoon, add this corn flour mixed water into it.

  7. Stir well and let it cook again for 5 minutes.

  8. While serving add little lemon juice and spread jeera-paper ("cumin seeds-paper") powder on it.

Sandwich

It had been long time i bought a Sandwich Patra(Sandwich mold). Which is used on stove and not electric .
It comes in a square shape and inside a diagonal line.. which in turn cuts the slices into triangular shape.
Day before yesterday got a chance to prepare it.. but, my mobile was totally out of charge..and no electricity at home that time.. so couldn't take pics.. :( hope you people will still try this recipe :)

Preparation Time: 15 Minuets
Cooking Time: 2-3 Minutes

Ingredients:

Sandwich Bread
2 medium size onion finely chopped
2 Tomatoes finely chopped
Coriander leaves finely chopped
Red chili powder to the taste
salt to the taste
3-4 Table spoon Ground nut powder ( Roasted ground nut powder *)
1 Tea spoon sugar for taste
1 Tea spoon Lemon juice
Butter.

Procedure:

  1. Chop the onion , tomato, coriander leaves finely.
  2. Mix all the ingredients well. ( add salt at the end , just before you are ready with everything else,so that mixture wouldn't leave water)
  3. Apply butter to both the bread slices, put the above mixture inside the slice.
  4. Apply butter to the mold and then keep the stuffed slices inside.
  5. Roast both the sides. It would take around 3-4 minutes.
  6. Once roasted nicely, brown color comes. Ready to serve.
Serve Hot Hot with tomato sauce.

* ==> Roast the ground nuts on medium flame of stove in an iron wok.
Remove the skin part and then grind the ground nuts.

TIP: If the mixture you prepared becomes more ,Roast/Deep fry the udad papad and spread this mixture on it and eat ..as we eat Masala Papad in restaurants :)
