Kairichi Chutney/Green Mango Chutney/Aam Ki Chutney

Mango Chutney

Kairichi Chutney



Ingredients:
1 cup of Green mango pieces.
(Chop Small-medium size pieces of Mango.
80-90gm Of sugar. Since the mango I used was not so sour it had a sweet taste in it, i used 80 gm for this much quantity.If the mango you are using is quite sour use 100gm Sugar.
1/2 TSP Mustard seeds
1/4TSP Fenugreek Seeds ( methi seeds)
2 TSP Ghee
Procedure:
  1. Pour ghee in a pan and let it melt. Once it is, add Methi.Fenugreek seeds. Once they turn brown add mustard seeds.
  2. Once mustard seeds start spluttering, add the chopped Mango pieces. 
  3. keep the flame on slow heat and cover the pan with a lid.
  4. Let it coo for 5 minutes. Give a gentle stir.If the mango pieces have become soft, add the sugar. and mix well. If they are not soft yet, cover for another 2-3 minutes and let it cook. Basically we have to add the sugar to the soften mango.
  5. Once you add sugar and mixed it well, coo for another 5 minutes (covered with lid).
  6. Give a stir and make sure sugar and mango has blended together well.
That's it...it's done...
Serve this chutney with chapati as a side dish.

Cucumber Sabji / Kakadi chi pith perun Bhaji / Kakdi Sabji





A quick recipe of side dish, if your fridge is running out of Veggies, a good option..coolant for your tummy. 
Add Cucumber to your diet during warm summer months.


Ingredients:
1 Tsp oil
Mustard seeds
Cumin seeds
Asafoetida
Turmeric powder
Curry leaves
Fresh Cucumber chopped into small cubes ( I took half of the long dark green Cucumber)
Red chili powder,
salt to taste
2-3 Tsp Coarsely ground Gram flour ( or just usual Gram flour)


procedure:
  1. Peel of the Cucumber and cut into cubes.
  2. Keep oil to heat up. Once heated, add mustard seeds, cumin seeds,asafoetida,turmeric,curry leaves.
  3. Add chopped cucumber pieces.
  4. Stir well. Add red chili powder as per taste. When you prepare this dish first time put little less than you think you would need. :-) you will get an idea next time. 
  5. Add salt.
  6. Mix well. Keeping flame on slow-medium flame. Cook the cucumber until soft but not soggy soft. Just soft enough that when you try to press it with the spoon it is not hard.
  7. Once cooked well ( approx. 5-7 min should be enough) add 2- 2 and half Tsp of Coarsely ground gram flour or a usual gram flour. Mix well in order to apply the flour to the the full quantity of cubes. Adjust the flour as per your taste.
  8. Cover with the lid and on the lowest flame, cook for 5 min. This is required to cook the flour now.
  9. Mix it well and if you see the flour might be yet uncooked, cook for couple of minutes more.
Serve hot with chapatis.

Beans Salad / फरसबी ची कोशिंबीर

This is a Traditional Maharashtrian dish...a healthy yet tasty side dish to accompany rice and daal :)


Ingredients: 
Beans
Ground nuts powder( roasted ground nuts powdered)
Fresh grated coconut
chopped Green chillies
Salt to taste
Little bit Sugar 
Lemon juice
Pinch of soda (Bi-bicarbonate)
Mustard seeds,Cumin seeds,Asafoetida


Procedure:

  1. Remove the threads from the sides of the pods and chop them well.
  2. Pour 1-2 Tsp oil in pan. Heat it well. Add cumin seeds,mustard seeds and Asafoetida. Add chopped Beans pods and stir well. ( see Note)
  3. Add pinch of soda. And stir well. Sprinkle little water with hands.Just sprinkle, don't add water.
  4. Cook well on medium flame of stove. Giving continuous stir so that it doesn't burn at the bottom of the pan.  This way of cooking makes the pods crispy :)
  5. Add finely chopped green chillies  or rather coarse chili paste.
  6. Add salt.
  7. Once it is cooked well. Switch off the gas and keep it aside.
  8. Once it is cooled properly, add sugar,fresh grated coconut, groundnut powder and lemon juice. Mix well and it is ready.
Note: Instead of cooking the chopped pods in pan, cook them in pressure cooker.
         Put chopped pods in a bowl and without pouring water in the bowl, pressure cook    
         them.

Masala Mirchi

Here goes some spicy recipe for this winter..:)
I always wonder how do my mom can think of so many recipes.. i mean remembering the proportion of ingredients for so many recipes ..isn't it a difficult task?she replies.. the way you people manage work in office.. how do you remember ..your subjects..actually yes.. i remember, i studied 40 subjects in engineering.... project in last year.. if we think of the number ..it appears something great and all..but we get used to it..or get adjusted ..so i also realised that cooking becomes easy if you have interest..or zest to do it..anyways whatever is the case..i still do hats off to my mom:) who is a amazing cook.. another recipe from her repertoire :)

Preparation time:20 minutes
cooking time: 10 minutes

Ingredients:
Bullet green chillies

Half cup gram flour(dalicha peeth/besan)
4-5 garlic cloves
oil
salt to taste
1/2 small spoon turmeric
half lemon
Procedure:
  1. Roast the Bengal gram flour(besan) in kadhai on Sim flame till it changes color to light red.
  2. Let it cool down. By the time pestle the garlic cloves finely.
  3. Once the flour is cooled down,in a mixing bowl, add 2-3 table spoon oil,turmeric,salt,lemon juice to the flour.
  4. Mix well. Flour shouldn't be very dry or moisturised.Adjust the oil in such way.I feel the normal ladle we use in oil container can be used 2-3 times.
  5. Cut the chillies vertically (side slit).
  6. Remove all the seeds inside carefully, without widening the slit.
  7. Stuff the flour mixture in each chili.

8. Heat up an iron wok.

9. Pour 2 table spoon oil.

10. Keep all the chillies one by one in wok.Keep the stove knob in Sim position only.

11. Cover the wok for around 3-4 minutes or till chillies are cooked.

12. See if underside is cooked;chili has got wrinkles :).

13. Flip the chillies. Cook this side also.

14. Overall it takes 7-8 minutes to cook.

15. Switch off the stove. Let it cool down.

16. Can be served as a side dish.
