Gojjawalaki - Karnataka special Pohe recipe

 



Gojjawalaki - gojju + Awalaki - Karnataka dish of Pohe / rice flakes. 

Gojju means - spicy tangy sweet paste 

Awalaki - Pohe / rice flakes 

The Gojju in this dish is nothing but a mixture of water , tamarind extract , Jaggery , rassam masala , salt , turmeric.


 

1 cup medium thick Poha - pulse it on a blender to a texture you see in the picture. 

Mix all the ingredients of the Gojju together ( Spices - take the quantity as per the taste which suits your palette) I keep it little higher on spice and sweet, little low on tangy taste ) 

For 1 cup of rice flakes , use 1.5 cups of water and mix everything in the water except underlined above.

Once you blend the rice flakes add it to this water. 

Mix well. Keep aside for 15-20 min covered with a lid.

All the water will be absorbed by rice flakes and they will puff up. 

Use fork to separate the mixture and it will be of crumble texture. 

Now, make a tadaka - pour little oil in a kadai - Once heated, add Urid daal , Chana daal, peanuts , red chillies , asafoetida , mustard seeds. 

Pour it on the Poha mixture or if you did tadaka in a big kadai - add the Poha mixture to this kadai and mix all well. 

Add chopped coriander leaves before serving. 

It is served cold - so perfect for a meet up / pot luck.

Drumstick Soup


My mum taught me this recipe this year.. Drumsticks are known to be super healthy !
We use it in Maharashtrian Ambati and ais widely known to be used in South indian Sambar recipes.
But..as a soup it sounded fascinating so I alsed her to make once...and voila...it was a hit on first attempt with me.

Very few basic ingredients...

here we go :-)

Ingredients:

I took 2 medium thick Drumsticks
5-6 twigs of coriander leaves
grated ginger - as per your taste
black pepper powder 2 pinches
salt to taste
1 tsp sugar
Lemon juice while serving 

Procedure :

  1. Chop the sticks approximatey to the legth of your index finger while chopping try to remove the threads from the sides(skin ).
  2. In a pressure cooker,keep a pan with sticks in it WITHOUT water in the pan.Cook for 3-4 whistels ( some pressure cookers cook them in 2 whistels too - so adjust as per your cooker :-)
  3. Keep 2 cups of water for boiling in a pan.
  4. Once water starts to boil, scoop out the soft geletenious flesh from cooked drumsticks and add it to the water.
  5. If you get some threads from the skin, remove them.
  6. Add salt, sugar, finely chopped coriander leaves , black pepper powder, grated ginger to the water.
  7. Give a nice stir and mix well - cook  everything together for 5 min.
  8. Ready to serve. 
Isnt that easy??? 

Squeez some lemon on top when served in a bowl.  Never cook any dish after adding lemon juice - high heat destroys the Vitamin C in lemon juice :-)

 In a recent post by Rujuta Divekar , she had mentioned that in a Nutrition sceince conference, Drumsticks were given a title of future food. That is this tree will sustian the same amount of nutrients even through the climate changes...

Rich Iron Soup




You must be surprised to read the name like that. Nothing came in mind except that name,since this soup really holds a very rich quantity of Iron. :)

Preparation time: 10 Minutes
Cooking time: 10 Minutes
Serves: 2


Ingredients:

1 Medium sized tomato
Half Beet root if it is a big one otherwise 1 small one will do.
Half onion
1 carrot
2 T spoon Ghee
Mustard seeds
Cumin seeds
Salt to taste
Curry leaves
1 T spoon grated ginger
1/4 T spoon red chilli powder(optional)
1 T spoon corn flour


Procedure:
  1. Cut onion,beetroot,carrot,tomato in medium sized cubes.
  2. Cook them in a pressure cooker for 4-5 whistles. ( As per your pressure cooker, all the ingredients should cook well to get mashed easily.
  3. Remove the skin of tomatoes before you grind vegetables.
  4. Once vegetables are little cooled down, put corn flour in the mixer along with cooked vegetables. Also,add grated ginger, 7-8 curry leaves. Grind well.
  5. Add some water and grind well so that no lumps are present.
  6. We are not going to filter the mixture in order to retain the fibre content in vegetables.
  7. Pour 2 T spoon Ghee in a pan and let it heat well.
  8. Put cumin seeds,curry leaves. Once they crackle, pour the ground mixture in it.
  9. Add water as per your taste. Whichever consistency you need,thick or thin.
  10. Add salt to taste, red chilli powder as per taste though it is optional. :)
  11. Let it come to boil. Cook for around 7-8 minutes.
  12. Before serving, sprinkle roasted Cumin seeds powder or pepper powder and squeeze little lemon juice.
Have a nice soup!!!


Note: Lemon juice will make the iron content of this soup get absorbed in your body fast.

Tomato Soup ( टोमँटो सूप )


A very common and usual recipe .. but.. thought may be helpful for few ..:)

Preparation Time: 15 Minutes
Coking Time:10 minutes

Ingredients:
3-4 medium sized tomatoes. Pick up nice red fresh tomatoes.
Grated Ginger
Red chilli powder to taste
Salt to taste
1-1.5 Table spoon Corn Flour
water
For Tempering==>
Curry leaves
Cumin Seeds(Jeera)
1 or 2 Small spoon Ghee/तुप

Procedure:
  1. Boil the tomatoes in pressure pan/cooker for about 5-6 whistles.
  2. After the cooker cools down, take out the tomatoes and remove the skin of tomatoes.Grind the tomatoes along with grated ginger in the mixer( If you want only flavor of the ginger , can avoid grinding it together with tomatoes and add it while boiling).
  3. Pour this mixture through a strainer and sieve it finely.As much as possible, take out the puree properly.Throw the tomato sediment after filtering . . seeds etc stuff..You will get fine tomato puree.
  4. Heat the ghee in the pan.Put the cumin seeds/jeera ; when they splutter, put curry leaves.
  5. Now pour the tomato puree in it. After one small boil, add little hot/warm water in it .Just to have a consistency in soup. Just enough water so that it wouldn't be watery or thick.
  6. Stir well.
  7. Add salt to taste,little sugar, red chili powder and stir well again.
  8. In a small bowl, take little water( normal temperature water 3-4 table spoon) and mix the corn flour in it.Remove all the lumps; it should be a smooth fluid. While adding this corn flour thing, stir the mixture well.
  9. Let it cook for 5-8 minutes, once you see the consistency, you can remove it and serve hot hot.

Corn Soup


I had prepared this soup with the sandwich and then just thought that i can start giving recipes which can be prepared together. So this soup can/may go hand in hand with the earlier Sandwich(onion-tomato stuffed).

Preparation Time: 30 minutes including cooking.

Ingredients:

3-4 Corns Or already available sweet corn kernels
1 Table spoon Corn flour
salt to taste
2 tea spoon sugar
Black Paper+jeera(cumin seeds) powder
Lemon juice
Grated Ginger for flavoring ( Almost as lengthy as an index finger) :) i cant tell in terms of inch
3-4 Glass of Water.

Procedure:


  1. Start boiling the water in a steel pan; once it is boiled, pour the corn kernels in water along with the grated ginger.( so that ginger flavor comes nicely)

  2. Let the kernels boil finely, and allow it to become quite soft.

  3. Once you find them enough soft,Put sugar,salt in it.

  4. Stir well.

  5. Take 4-5 table spoon of water in a bowl and mix the cornflour well with your hands only so that the lumps wont be there.

  6. While stiring the soup with spoon, add this corn flour mixed water into it.

  7. Stir well and let it cook again for 5 minutes.

  8. While serving add little lemon juice and spread jeera-paper ("cumin seeds-paper") powder on it.
