Veg. Cutlet

Since long I wanted to prepare this but for some reason couldn't. When I used to remember all vegetables required wouldn't be there when all vegetables are there I wouldn't remember to prepare this. But...this time I prepared it on the same day as I got all required vegetables:)


I have shallow fried the cutlets to reduce the calorie content. 
You can serve them with Burger bun or you can make Cutlet Chaat. 


Preparation time: 20 min
Cooking time: 5 min


Serves: 11-12 Cutlets


Ingredients: 


2 Medium sized potatoes Boiled and mashed
10-12 French beans
1 Carrot grated
1 Beet root grated
2 slices of bread
salt to taste
1 Tsp Coriander powder
1 Tsp Cumin powder
Red chilli powder to taste
pinch of Turmeric powder
1 Tsp corn flour
3-4 Tsp Bread crumbs powder


4-5 Green chillies, Grated Ginger,2-3 Garlic Cloves. Make a paste of these ingredients.


Procedure:
  1. Boil potatoes in cooker till soft and once cool down mash them well.
  2. Chop French Beans finely. Put chopped beans,grated beetroot,grated carrot in a container.Just sprinkle water on vegetables but do not pour water.Pressure cook for 1 or 2 whistles depending on your pressure cooker. But cook vegetables soft enough to get mashed well.
  3. Once all the vegetables are boiled well and cooled enough mash them in mixer.
  4. To these mashed vegetables add mashed potatoes, chilli-ginger-garlic paste,salt,cumin powder,coriander powder,red chilli powder,turmeric powder,corn flour.
  5. Mix well and make a tight dough. 
  6. prepare cutlets in the shape you wish. Either like patties or oval shaped also.
  7. Heat up oil on a frying pan.
  8. Roll the patties/cutlets in Bread crumbs powder and shallow fry them on both the sides.

  •  If the ground mixture of vegetables become little wet, add the bread crumb powder to this mixture and then just prepare cutlets and shallow fry them.
  • Proportion of vegetables ans potato is almost 1:1 if you have 1 cup boiled vegetables take 1 medium potato. 
  • You can add green peas, corn,onion to cutlets

Split Green Gram pakoda / हिरव्या मुगाच्या डाळीची भजी

After long long time I am posting something :) Life has become hectic with managing work and home :) But today I made something new and couldn't resist to post the recipe today at any cost. 
Its been raining in Derby since weekend so Pakodas complemented the weather quite well and we truly enjoyed our evening with these spicy and hot pakoda :) 
Here we go!! Hope you enjoy them too.......


Preparation time: 15 min. apart from soaking time.


Ingredients:  
1 cup Split green Mung  ( green moong daal )
1 medium size onion finely chopped
grated ginger to taste
2 Tsp Coriander powder
salt to taste
3-4 green chillies
1/2 Tsp cumin powder
1 Tsp Rice flour 
red chilli powder to taste ( optional)
oil to deep fry


Procedure:

  1. Soak the green moong daal ( split green Mung ) in water for minimum 5-6 hours.
  2. Drain water properly.
  3. In a mixer, put this soaked-drained daal, grated ginger,salt,coriander powder,cumin powder,cut green chillies and blend well to a paste. 
  4. Add rice flour and any spices if needed as per your taste to this mixture. Add cut onion.
  5. Mix well.
  6. The mixture will be thick in consistency which is good for pakoda to be less oil absorbent . ( consistency should be thick. that is why take care in draining the water properly)
  7. Heat oil. Once ready, take little portion of batter in spoon and pour small sized pakoda and deep fry till dark brown color.
  8. You can add finely chopped curry leaves also to get a nice essence.
  9. Serve hot with tangy Tamerind chutney or pudina chutney  or anything as per your taste:)

Cabbage Pakoda!!!


Tastes great and you can make your family eat cabbage without complain much ;)
Nice snack dish for these depressingly cold winter evenings :)


Ingredients: 


1 cup Finely chopped cabbage
2 ladles Gram flour
Water
Red chilli powder to taste
Salt to taste
1 Tsp Coriander powder
2 pinches of Soda bi carb. 
1/2 Tsp Carom seeds ( Ajwain/ओवा )
1/4 Tsp Turmeric


Procedure: 
  1. Finely chop the cabbage. Or you can cut into vertical shaped roughly as well. 
  2. Add sufficient Gram flour just that much to accommodate the cabbage. 
  3. Add salt,carom seeds,red chilli powder,coriander powder,turmeric.
  4. Add 1 Tsp hot oil.
  5. Add soda.
  6. Mix well so that all the ingredients are mixed well.If you feel to have more Gram flour,add little.
  7. Slowly add water in order to just bind flour not like usual BHAJI batter. :) Put only few spoons of water slowly one by one and check. It shouldn't be fluidly at all.
  8. Heat up oil.
  9. On medium flame pour little mixture by spoon in arbitrary shape. 
  10. Once they pop up in oil, then flip the side.
  11. Fry till golden brown.
Tastes good with Tamerind-jaggery sauce............

साबुदाणा वडे ( Sabudana Vada)



Ingredients:
1 Cup sabudana (Sago)
1 Potato
2-3 spoons roasted groundnuts powder ( spoons what we use for drinking soup . That much quantity of ground nut powder)
salt to taste
2-3 green chillies ( finely chopped)
1 small spoon red chili powder
oil to deep fry
Cumin seeds
ginger (grated)

Procedure:
  1. Soak the sabudana ( sago) in water for 5-6 hours. Keep water required to soften them. Sabudana should not become sticky.
  2. Boil one potato in cooker itself.
  3. Once the sabudana is ready, mash the potato well and add it to sabudana.
  4. Add finely chopped chillies, red chili powder( this we are adding just for good color), salt to taste, jeera(cumin seeds),grated ginger into sabudana(soaked).
  5. Mix it well.

  6. Make medium size vadas.


7. Deep fry them in hot oil till you see nice redish brown color vada. (Keep the flame high first while frying,and then while removing them put the flame at sim.)

दही वडे

दही वडा :

साहित्य :
१ वाटी उडदाची दाळ
हिरव्या मिरच्या बारीक़ चिरलेल्या
अधरक बारीक़ किसलेला
तळण्या करता तेल
जीरे पुड
कोथिम्बिर ( optional) बारीक़ चिरलेली
पाणी
मीठ


कृती :

  1. उडदाची दाळ जवळ पास २ ते अडीच तास भिजत ठेवावी
  2. नंतर मिक्सर मधून वाटुन घ्यावी
  3. वाटलेली दाळ जास्त वेळ ठेवल्यास तेल जास्त ओढल्या जाते , म्हणुन जेव्ह्ना वडे करावयाचे असतील तेव्ह्नाच वाटुन घेणे उत्तम
  4. वाटल्या वर हाताने चांगले फेटून घेणे
  5. वडे तळून घ्यावेत
  6. लहान भांड्यात पाणी गरम करावयास ठेवावे
  7. पाणी कोमट झाले की त्यात मीठ घालावे व नंतर त्या पाण्यात वडे घालावेत
  8. १ ते २ मिनिटे ठेवावेत व नंतर हातात धरून पिळून काढावेत
  9. दही छान घुसळुन घ्यावे व त्यात १ -२ चिमुट साखर घालावी( दह्याचा आम्बट पणा बघून घालावी ) , किसलेला अद्रक आणि बारीक़ चिरलेली मिर्ची एकत्र वाटावी व दह्यात घालावी ( चावी प्रमाणे मिर्ची घालणे )
  10. दही परत चांगले मिसळुन घ्यावे व वाड्यानवर घालावे
  11. वरून जीरे पूड थोडेस तिखट अस हाताने घालावे
  12. घरी असल्यास चिंच गुळाचा सॉस ही घालावा
  13. हवी असल्यास कोथिम्बिर बारीक़ चिरलेली घालावी .
टिप :
  1. दही बनवताना मीठ घालू नए
  2. तळून झाल्या वर ज्या वेळेस वडे वाढायचे असतील त्या आधी कोमट पाण्यातून काढून घ्यावेत

Moogachya daliche vade(Moong dal pakode)



Ingredients:

1 Cup moong dal ( yellow split peas)
grated ginger to taste
4-5 green chillies ( as per your taste you can reduce or add more)
salt to taste
3-4 table spoons coriander seeds
2 (small) garlic cloves ( optional)

Procedure:
  1. Soak moong daal for 5-6 hours in water.
  2. Before grinding the daal, drain the water totally.
  3. Grind grated ginger,chillies,garlic,coriander seeds along with daal.
  4. Add salt as per taste.
  5. Heat the oil in Iron wok.
  6. Make small size bhajis and fry it on high flame of stove.
  7. Fry them till you see a brown color on them.
  8. Make it sim flame and then remove them.
  9. Serve hot hot with tomato sauce or Tamarind-jaggery chutney ( chincha gulachi chutny) or pudina chutney.
