Gojjawalaki - Karnataka special Pohe recipe

 



Gojjawalaki - gojju + Awalaki - Karnataka dish of Pohe / rice flakes. 

Gojju means - spicy tangy sweet paste 

Awalaki - Pohe / rice flakes 

The Gojju in this dish is nothing but a mixture of water , tamarind extract , Jaggery , rassam masala , salt , turmeric.


 

1 cup medium thick Poha - pulse it on a blender to a texture you see in the picture. 

Mix all the ingredients of the Gojju together ( Spices - take the quantity as per the taste which suits your palette) I keep it little higher on spice and sweet, little low on tangy taste ) 

For 1 cup of rice flakes , use 1.5 cups of water and mix everything in the water except underlined above.

Once you blend the rice flakes add it to this water. 

Mix well. Keep aside for 15-20 min covered with a lid.

All the water will be absorbed by rice flakes and they will puff up. 

Use fork to separate the mixture and it will be of crumble texture. 

Now, make a tadaka - pour little oil in a kadai - Once heated, add Urid daal , Chana daal, peanuts , red chillies , asafoetida , mustard seeds. 

Pour it on the Poha mixture or if you did tadaka in a big kadai - add the Poha mixture to this kadai and mix all well. 

Add chopped coriander leaves before serving. 

It is served cold - so perfect for a meet up / pot luck.

Oats, edible gum , nuts healthy bars







Posting here after long time … 

This recipe came as a thought process after thinking about how to feed right balance of something local , nutritious , seasonal , and the food what our genes know to our family.

That’s what the nutrition science say.

Since living in the UK , Oats are local …and I have been meaning to make Gond / Dinka in Marathi - edible gum laddoos for winter ( ticks seasonal) and thought why not club the two 😬

So here it is : 


Ingredients

1 cup rolled oats 

1/2 cup - mixed nuts ( I used almonds , pistachios,walnuts, cashews , black raisins 

1/8 cup edible gond / Dinka 

2 tablespoons Khaskhas/ poppyseeds 

2/3 cups dry coconut 

1/2 to 3/4 cup powdered jaggery ( if you don’t have this use normal jaggery but adjust the quantity as      

        per it’s sweetness - I wanted little less sweet so I used 1/2 cup plus a tea spoon


1/3 cup ghee ( melted form ) 

2 tablespoons spoon dry dates powder ( Kharik powder )


Procedure

1. With 2 tsp ghee , once heated in a pan , fry the gum kernels ( Dinka ) until nice and fluffy, on medium 

    flame. 

2. Dry roast all the other ingredients separately.  Nuts can be roasted in little ghee all together. 

3. Grind the nuts to a powder.

4. Just use a cup or with your fingers , crush the fried gond. 

5. Grind oats also to a coarse texture. 

6. In a pan add little ghee and pour the jaggery. Let it melt completely.

7. Add all the powders to it and mix well - switch off the flame. 

8. Add ghee to the mixture and mix thoroughly all together. If you see it’s dry add Lillie more ghee ( little bit at a time )

9. Keep a greased tray ready. 

10. Pour the mixture in a square tray and press with a spatula so the mixture goes to each corner. 

11. With a light hand , put square / bar shaped lines for shape with a greased knife. Once cooled , it can’t be cut into required shapes. 

12. Leave it to rest for 20-30 min. 

13. Once cooled , remove the pieces. 


Edible gum is very healthy and elders recommend it for good ,strong backbone. 

Must consume in winters only.

Potato Sandwich

Potato Sandwich

Aloo Sandwich
A quick... recipe..good option for a Dinner or Breakfast or even a Brunch ...this is a second version of Potato filling sandwich
Hope you will Enjoy :-)


Makes: 8-9 Sandwiches
Time for preparation: 10 min


Ingredients:
6 medium sized potatoes (I took Salad potatoes)
2 green chillies, if medium hot. Or take as per your taste
1 Tsp Cumin seeds
1 Tsp grated ginger
10-12 twigs of coriander leaves. Chop them roughly.
1/4 portion of Lemon
Salt to taste
Butter to apply


Procedure:

  1. Grind Chillies,cumin seeds,coriander leaves,Ginger together to a coarse paste.
  2. Boil potatoes until soft. I pressure cooked them until real soft.
  3. Pill of the skin of potatoes,mash them well and remove if any lumps are there.
  4. Add the green chili mixture to the mash add lemon juice and salt. Mix well just once. Dont knead it too much which will make the mash loose.
  5. Take couple of spoons of flavored Mash and fill into 2 slices of bread. You can spread this mash well into the slices.
  6. Apply butter on the top of sandwich and grill until nice crispy top you get.
  7. Serve with nice cool Buttermilk.

Idly / Steamed Rice Cakes





A famous Breakfast, or even sometimes Lunch/Dinner. Healthy being steamed. I know, no need to talk about Idly.. isn't it?
Posting a recipe here using Idly Rava.


Ingredients:
2 Cups Idly Rava
1 cup Urad daal ( white lentils)
1 Tspoon Fenugreek seeds ( methi seeds)
Handful of Poha ( flattened rice / Powa )


Procedure:

  1. Wash Idly Rava,Lentils,Fenugreek seeds and soak all the ingredients in water for 5-6 hours. Water should be enough. Much above the ingredients.
  2. Once soaked, remove all the water. Grind them in Mixer to a consistency just towards coarse but not coarse or fine. While grinding add enough water to smooth grinding.
  3. Consistency of batter shall be pouring consistency. Pancake batter consistency.
  4. Once the batter is ready, pour it in a container and cover it with a lid. Keep aside in warmer place for 10-12 hours for fermenting to take place. e.g overnight.
  5. After 12 hours, you will see the batter has blown up. Add 1-1.5 Tsp salt to batter.
  6. Keep water for boiling in a pan. If you have Idly mold,  apply/spread oil to the mold first. Pour the batter ( as per the size of the mold. ) 3/4th fill in the mold.
  7. Steam for 12-14 min. 
  8. Keep aside for cooling. Don't try to remove Idly when it is hot, it will be very soft then. Give 5-6 min to cool down then remove it using spoon.
Serve hot with Sambar or Coconut chutney or Ground nut chutney.



Idly is a good option for food when you having a throat infection and avoiding oily stuff. It is hot,soft and healthy what more we want?

Instant Sandwich - Tomato-Onion Sandwich



Ingredients:  
2 small Finely chopped onions
2 small finely chopped Tomatoes
Chopped coriander leaves
3-4 Tsp Ground nuts powder ( Roasted and powdered groundnut)
Red chilli powder to taste
Salt to taste
Sugar 1/2 Tsp
Brown Bread or White bread
Butter

Procedure:

  1. In a bowl, mix all the ingredients well.
  2. Apply little butter on bread slice and stuff the above mixture.
  3. Roast it in sandwich maker on medium flame of stove for about 4-5 min or till roasted well golden brown. Once roasted, flip and roast the other side as well.
  4. Serve hot with Tomato ketchup  :)

Semolina Veg Roti - Rava Vegetable Roti



After a long long time since I posted anything on my blog ..feeling really nice to write something today...


So why not to start with a healthy recipe ...
This is a real easy recipe which includes only chopping of vegetables and mix them...that is it! 
Hope you all enjoy this and try at home..

Ingredients:


Fine semolina
Finely Chopped Onion
Grated carrots
Finely chopped Dill leaves
Chopped green chillies
Chopped coriander leaves
Salt to taste
oil

Procedure:

  1. In a mixing bowl,  take fine semolina as much as required by you depending on how many Rotis you want to prepare.
  2. Add chopped onion,chopped Dill leaves,green chillies,coriander leaves and grated carrot.
  3. Add salt to taste. DO NOT ADD WATER AS OF NOW.
  4. Mix all the ingredients well in the bowl.
  5. You can see the watery texture due to added vegetables.
  6. So, add  water slowly seeing the consistency. 
  7. Consistency of the dough should be medium tight; just easy enough to apply the roti on Tava properly.
  8. Apply 1 Tsp oil on Tava, spread well.
  9. Take enough dough and apply roti on tava with your palm and fingers.
  10. Cover tava with lid and keep the gas flame on medium.
  11. Once you see the top side dry, flip the roti, leave some oil from the side and roast this second side well.
  12. Serve hot with tangy lemon pickle or coconut chutney or any favourate sauce.
Note: You can skip Dill leaves if you dont like it.

Healthy Upma / गव्हाची उकड



Preparation time: 5 minutes
Cooking time: 15 minutes
Serves: 2

Ingredients:

1 and half cup wheat flour
1 and half cup water
mustard seeds
cumin seeds
curry leaves 2-3 Twigs
medium size onion finely chopped
red chilli powder as per taste
mashed garlic or finely chopped garlic
1 T spoon coriander powder
salt to taste
Turmeric
Asafoetida
Chopped Coriander leaves for garnishing


Procedure:
  1. Roast Wheat flour in a pan without oil till the raw smell goes off. It will take around 5-7 minutes. Don't roast till flour changes colour. Just rawness should be removed.
  2. Switch off the gas and remove the roasted flour in a plate.
  3. In the pan ,heat 4 T spoon oil.
  4. Once oil is hot, put mustard seeds, let them crackle. Put cumin seeds,asafoetida,curry leaves,turmeric.
  5. Put chopped onion,mashed garlic and stir well. Let the onion cook well.
  6. Put red chilli powder as per taste and then pour 1 and half cup water.
  7. Let the water come to boil. Add salt as per taste.Add coriander seeds powder.
  8. Once water is boiling, add the roasted wheat flour and start stirring immediately. Stir until it mixes well.
  9. Close the pan with a lid and keep it for 3-4 min on medium flame.
  10. Just give one stir gently to avoid flour getting stick to the pan.
  11. Garnish with chopped coriander leaves and serve HOT :)
Tastes good with a lemon pickle. Or any of your choice :)

You can replace wheat flour by Jowar flour as well. The Upma will still be nutritious :)

Note: Maintain Flour-Water quantity combination as per given. ( 1:1) for the proper consistency of the dish.

Mint Chutney Sandiwich / पुदिना चटणी sandwich / Pudina chutney sandwich


My favourite one...Mint chutney sandwich...very easy to prepare..and of of course cool for stomach..:)
This mint chutney can also be used with Samosas, aloo tikki chat,bhaji,pakodas,mathri chat,shev batata puri chat,most importantly....Pani puri ka pani..:) and the list is endless..use it as per your imagination.
A healthy chutney...here it goes..
Preparation time: 10 minutes.
Ingredients For Chutney: 10-15 Twigs of mint( Take out their mint leaves)
Same amount of coriander leaves. ( 1:1 w.r.t mint leaves)
4-5 green chillies or as per taste
salt to taste
2 T-spoon cumin seeds
2-3 cloves of garlic
1/8 t spoon sugar
For the sandwich:
White bread
Tomato ketchup
Butter
Cheese.
Sliced tomato,cucumber,boiled potato
Thin shredded onion(optional)
Grated beetroot(optional)
Grated Carrot(Optional)
Procedure for mint Chutney:
Grind all the ingredients together in mixer along with 2-3 T spoon of water.
This chutney can be stored in air tight container in a Fridge for a week.
For sandwich:
Apply butter to both the slices. Then apply mint chutney on one of the slices and tomato ketchup to other.
Club boiled potato slice,cucumber slice,tomato,grated carrot,grated beetroot,shredded onion between two slices.
Grate cheese on these vegetables and make sandwich. :)
Easy and healthy isn't it?

पेसरट्टू / Green Gram n rice dosa


One more Dosa without fermentation which makes me feel a healthier Dosa. Also, whole Green gram makes it rich in Protein and energy. Green gram is one of those who doesn't loose their protein profile even after cooking. :)

I think that is why green gram curries are so healthy.
Alright then, Enjoy your healthy Andhra cosine's Pesarattoo :) Green gram Dosa....
To give a spicy edge, i made Potato Bhaji (which is used in usual masala Dosa)


Preparation time: 15 minutes
Serves - 8 to 10 Dosas

Ingredients:
1 cup rice
1 cup whole green gram
2 T spoon grated ginger
4-5 green chillies
2 spoons cumin seeds
4-5 sprigs of coriander leaves
salt to taste
1/4 T spoon sugar

Procedure:
  1. Soak rice, green gram together for 7-8 hours.
  2. Grind rice-gram together in mixer along with grated ginger,green chillies,coriander leaves,cumin seeds,salt,sugar. While grinding add little water.
  3. Keep the consistency of batter little thin than normal dosa.
  4. Heat the griddle with little oil.
  5. Spread the batter in circular motion to make dosa.
  6. Roast well. Flip the Dosa and keep it on griddle for a minute or two. Don't overcook the other side.
Serve hot with coconut chutney or potato dry curry.
Note: If you want Dosa to be more crispy, take 1:2 proportion of Rice-Dal. That is if you take 1/2 cup rice, take 1 cup whole green gram. This serves ( 1/2 cup rice+1 cup green gram) around 8 Dosas.

अडई दोसे / Adai Dose / Mixed lentil Adai Dosa





This dosa recipe belongs to Tamilnadu. Contains 5 types of daal and rice..i like this dosa because it doesn't have fermentation. :) Also nutritious and something variety of dals in it makes it healthy and tasty both :)

Preparation time: 20 min apart from 1 hour of soaking
Cooking time: 2 minutes :) just for making dosa..


Ingredients:
1 cup rice ( I have tried with different rice varieties  Idly rice , Basmati , Sona masoori )
Chose whatever you like :)

1/4 cup urad dal
1/4 cup bengal gram ( Chana daal )
1/4 cup yellow moong dal
1/4 cup toor dal
Asafoetida
5-6 twigs curry leaves
red chillies as per taste
1 spoon black paper
water as required to grind to dosa batter consistency 
salt to taste
oil
Optional: Drumstick leaves approximately half bowl.
green gram 2 table spoon


Procedure:
  1. Soak rice, all 4 or 5 dal together in enough water for around 1 hour.
  2. Grind the mixture along with red chillies, Asafoetida,paper.
  3. Consistency of the batter should be little more thicker than normal dosa batter.
  4. Do not grind fine.. it should be little ..very little coarse.
  5. Add finely chopped curry leaves,drumstick leaves and salt to the mixture.
  6. Mix well.
  7. Keep the tava on stove and pour 1 table spoon oil. Spread it well.
  8. Once tava is hot enough pour a ladle full of the the batter and make a dosa.
(working from center towards outwards :) all of you must be knowing this..already :)
Serve HotHot with tomato sauce ( i like this combination a lot) or a fine coconut/ground nut chutney. :)
Healthy drumstick leaves: Rich in Vitamin A ,C, iron.
But since it is little bitter in taste, we put it in such a way that we wont realise the bitterness but still get the benefits :) Very very good for health. So ..do add it in this recipe.

Instant Rava / Sooji Appe





After reading this recipe i was dying to prepare it but couldn't find time at all...for a long time.
Today as soon as i came from office..i started making preparations for this recipe.
Hope you all like it :)
I couldn't take the pics properly,but couldn't wait to prepare the recipe again and wait till that time...please excuse me for that...

Kitchen Tool: Appey patra

Preparation time : 5 min + 60 min to soak
Cooking time : 7-8 minutes
Prepares: 15-17 appe

Ingredients:
1 cup Rava( barik rava) / chiroti rava / Fine Semolina
1 and half cup curds
green chillies finely chopped as per the taste
salt to the taste
grated ginger
curry leaves finely chopped
coriander leaves finely chopped
2 Table spoon Chana daal/Bengal gram
1 small tea spoon baking soda
2-3 Onions finely chopped


Procedure:
  1. Soak the chana daal in water for 1 hour.
  2. In a separate bowl mix rava and curds with enough water to make thick batter ( medium consistent ). cover it and leave it for soaking for 60 minutes.
  3. Add soaked chana daal in mixture.
  4. Stir well, add onion,green chillies,curry leaves,ginger,coriander leaves,salt.
  5. Add baking soda.
  6. Sprinkle oil on appey patra/molds ( non stick) properly.
  7. Let it(molds) become enough hot.
  8. Pour the batter in each of the hot molds.
  9. Cover the pan for some time 5-6 minutes.
  10. Check once with the wooden spoon.(After5-6 minutes you will see the sides of the molds are opening; that is appey is getting cooked. But when we dip the spoon in middle it might have not. So wait until it is cooked properly. But once you flip the appey and it is proper brown color with crisp you do not need to cook that side again.)
  11. Sprinkle little oil in a way that it will flow towards the side of the molds.
  12. Once the underside is cooked properly, you can see crispy, brown colored appey, flip the appey with the wooden spoon.
  13. Once both sides are done, remove appey from molds, and serve hot with coconut chutney or groundnut chutney or Dates-Cocum chutney( Recipe available on khaughar).
Note: Add soda just before putting batter in the molds. Add it just a minute before cooking. And mix well in the batter before pouring the mixture in molds.

Healthy Curry Leaves:
It has zero calories , 2.5% oil; beneficial in constipation,stomach problems,vomiting,spots and rashes, gives black hair( for grey hair problem) and also considered as a blood cleanser and has strong iron content.

Instant Rava Idly ( without fermentation )




Ingredients:

  1. 1 Cup rava ( Semolina) ( barik rava/ fine semolina )
  2. 1 Spoon gram flour( बेसन) (spoon what we use for drinking soup)
  3. 1 Carrot , choped into small cubes
  4. 1 Tomato finely chopped
  5. Coriander leaves finely chopped
  6. Pinch of Baking soda
  7. pinch of citric acid
  8. Salt to taste
  9. Water
  10. 2 Table spoon oil
  11. Mustard seeds
  12. Cumin seeds
  13. Curry leaves
  14. Urid dal ( उडदाची दाळ)

Procedure:

  1. Mix Semolina ( rava) and gram flour (besan ) together with little water to make a batter Add a pinch of baking soda, add salt as per taste.
  2. Beat the mixture well
  3. Soak this mixture for 5 minutes.
  4. Add pinch of citric acid.
  5. Beat the mixture well again.
  6. Apply little oil to the Idly pan/Mould.
  7. First put the chopped vegetables ==>carrot,tomato in the mould.
  8. Then pour the batter in the moulds.
  9. Steam it in the cooker for around 7 - 8 minutes.
  10. Heat the oil in Iron wok, put mustard seeds, cumin seeds, chopped corriander leaves,curry leaves, urid dal.
  11. In this tadaka, put these Idlies.
  12. Shallow fry the idlies for 2-3 minutes.

Note: We can steam the idlies in normal steel pan as well. Keep little water in the pan and boil it. Then keep a small stand inside this pan, and then keep the mould/idly pan on it. Cover the outer pan.

Akki Roti/ अक्की रोटी ( तांदळाचे थालीपीठ )

Akki Roti:

अक्की म्हणजे कन्नड़ भाषेत तांदुळ। म्हणुन अक्की रोटी म्हणजे आपण त्याला तांदळाचे थालीपीठ म्हणू शकतो





साहित्य :
२ कप तांदळाचे पीठ
कोथिम्बिर बारीक़ चिरलेली ( १ ते २ मीडियम साइज़ च्या जुड्या )
७ ते ८ मिरच्या बारीक़ चिरलेल्या ( चवीनुसार कमी किंवा जास्त )
४ ते ५ कांदे बारीक़ चिरलेले
शेपू बारीक़ चिरलेला ( साधारण १ जुड़ी )
कड़ी पत्ता बारीक़ चिरलेला
जीरा
मीठ चवीनुसार
पाणी

कृती:

  • तांदुळाच्या पीठात चिरलेला कंदा, कोथिम्बिर,कड़ी पत्ता, हिरव्या मिरच्या, जीरे, मीठ, चिरलेला शेपू घालावा व त्यात मावेल इतपत च पाणी घालून चांगले मळावे
  • पीठ, ना जास्त पातळ ना घट्ट असे मळावे
  • तव्यावर थालीपीठा प्रमाणे लावावे
  • कड़े ने तेल थोड़े तेल सोडा
  • रंग बदल्ल्या वर उलथवावे
  • दोन्ही बाजूंनी भाजावे ।
  • गरम गरम वाढावे
  • ह्या सोबत शेंग दाण्याची चटणी छान लागते
शेपू अगदी घातलाच पाहिजे अस नाहीये पण त्याने छान फ्लेवर येतो पण कुणाला आवडत नसल्यास घालू नय्ये

Dal Chutney

Ingredients:
1/4 cup chana daal (split Bengal gram)
1/4 cup urid dal(split black lentils)

Curry leaves ( for flavoring)
3-4 red chillies ( as per taste)
Tamarind to taste
Salt to taste
Sugar to taste
1 Table spoon oil for roasting the dal
1-2 Table spoon oil for Tadaka
Mustard seeds

1/2 cup Grated coconut

Procedure:

  1. Pour 1 table spoon oil in kadhai(iron wok) and put red chillies,curry leaves, chana dal,urid dal and roast (on medium flame of stove)till you see the golden brown color of dal.
  2. Let the mixture cool down, then grind it with tamarind, and little warm water.
  3. After the first grind, now put grated coconut and grind it again.
  4. Add warm water just to make it little pasty. Do not make this chutney watery .
  5. Put the tadaka of curry leaves and mustard seeds on the top of the chutney.
  6. Mix it well, ad ready to serve :)

Note: Proportion of dal in 1:1 so depending on the quantity you want
change the quantity of dal and other ingredients.

Tip: Always use Warm water in chutney to have the proper bond. Otherwise water gets separated from the
thick part of chutney.

This chutney can be served with any kind of dosa:)

Instant Rave Dose


Preparation Time: 30 minutes



Ingredients:

1 Cup rava(
Semolina
) ( jaad rava/chiroti rava)
1 cup rice flour
4-5 finely chopped onions
coriander leaves finely chopped
curry leaves finely chopped
3-4 green chillies to taste
(optional)
salt to taste
1 1/2 Big spoon curds
Cumin seeds
1-2 Carrots

Procedure:
  1. Soak the rava,rice flour in water and curds( 3 or more cups) for around 15 minutes. Put as much water so that batter is neither watery nor thick. you should be able to sprinkle it.
  2. Put the cumin seeds(jeera), salt, chillies,onion...all the chopped ingredients given above in batter.
  3. Mix it well. The batter should be consistent and without any lumps.

  4. Hit the tava (non-stick electric griddle) and put little oil on it.( Oil only for first Dosa.Later on no need)
  5. Sprinkle the batter on it with spoon unlike normal dosa and try to make it a round. We need 2 to 3 spoons of batter in order to have a medium size round dosa.

  6. Drizzle little oil on top,sides
  7. Flip the dosa once you see the side as golden brown.( Keep for more time if you want it crispy)
  8. After flipping just keep it for 1 more min (on the medium flame).
  9. Ready to serve :)
You can serve it with Ground Nut chutney or coconut chutney or tomato sauce also.

Tip: The proportion of rava and rice flour is 1:1
So if you can make as many dosas as you want with this proportion.

Note: The following items can be added in dosa as per your taste.
Dill leaves( shepu) finely chopped
palak finely chopped
carrot(Gajar) grated
Also,if you have fine rava(Fine semolina) with you,even that will work fine :)

GroundNut Chutney

Ingredients:
1 cup ground nuts
red chillies to taste
3-4 cloves of garlic ( optional and as per your taste)
1/4 cup grated coconut
salt to taste
little sugar
tamerind to taste
1 tablespoon oil
curry leaves,Cumin Seeds,mustard seeds for the Tadkaaaaaa
Procedure:
  1. Roast the ground nuts, red chillies,and garlic cloves together with oil till the garlic cloves changes the color to brown.
  2. Let the things cool down.
  3. Grind all the ingredients i.e ground nuts,chillies,garlic,grated coconut,tamerind,salt,little sugar together .
  4. Add little warm water after the first grind and then grind again just to mix the water well wilth.
  5. Heat the oil , add curry leaves,Cumin Seeds,mustard seeds
  6. And put this tadka on the cutney :)

Tip: Always put mustard seeds first in the hot oil, when they poo up, add cumin seeds and at the end add curry leaves. This is to avoid curry leaves and cumin seeds gettinng burnt.
